I'm currently planning to arrive at the beginning of November.
But I'm a little worried I'll miss the summer hiring rush for jobs in nice coast towns.
Will there still be jobs going at this time in places like Byron and Noosa?

I can't speak to personal experience, so take my advice with a grain of salt, but Australia is currently desperate for labour so you still have better odds than in years past.
You don't even have to try, c**ts needing employees everywhere. Especially regional tourist areas.
Yep, in WA you can walk down the streets and see signs on shops saying "Closed due to staff shortages."
My Auntie was the only employee at a clothing store for a week or so because all the other staff were quarantining with the coof.
Plus woolies and the fast food chains in my town are all hiring.
But it still depends on how employable you are. My town is filled with nog backpackers who have zero chance of getting a job.

Plenty of jobs in the service and tourism industry all over. so many awesome restaurants in the major cities are screaming for staff right now (the good ones are offering higher than award pay.. but the industry is pretty fricked for workers rights.. not a huge problem if you have a spine as you can just change jobs til you find something you like)
in saying that... with the WFH boom, people have moved from the cities and bought up/rented all the cheap/decent rentals in tourist spots. there's a reason why there's a shortage of staff there, most of the workers can't afford to live there anymore.
base yourself on a city fringe, work for a bit locally, get a lay of the land, do weekend/week trips then decide to move
also, avoid fruit picking.. brutal work, shit pay, shit conditions, frick all workers rights and the farmers are always crying poor
Yeah as an Aussie like I wouldn't even worry like you may not get the best thing ever. But there is more jobs here overall at any point than there has been when anyone has ever back packed before, does this mean you get the exact location you want...I don't know, but I do know you'll get a job here if you want one
