Memphis is one of the biggest shitholes in the United States. Avoid, except a daytrip because you're in the area anyway for an Ole Miss football weekend.

Terry Blacks in Austin makes the best BBQ beef rib I've ever eaten in my life. I would take that over any BBQ I've ever eaten.
Louisville is a low key city for BBQ. Everyone knows Mark's Feed Store, but Bootleg is my go to. My mom and brother swear by Momma's bbq. Mission BBQ has some of the best pulled pork I've ever eaten. I don't know how they get the grease out of it. It's so lean that it tasted like chicken. There are also a lot of good catering places in the city that do custom orders.
Memphis is insane. It's a crime ridden shithole, but the BBQ is fucking flawless. You can take your pick of about 100 places and they would all be good. We stayed in Tunica Mississippi at the casino and had a couple places from Memphis bring us catering orders because we refused to drive into the city after someone shot at our car.

Our food sucks and the gays in this state have no idea how to bring tourists here so they just made up some bullshit about "bourbon and bbq" pretending we have a culture but its just a lie to sell foreigners a stick from a bourban barrel with their name on it for $150
Louisville has definitely gone down the toilet, but I stand by the BBQ and breweries. I visit family twice a year. Every time I go, there are 2 new breweries in town. I've never been to a bad one. If you can brave the ghouls downtown, there are some rad places to go drinking

Memphis BBQ is a fucking meme. The most prevalent BBQ here is pulled pork, it's decent at best, but nothing worth traveling for, and if you want good ribs or brisket then you won't find it here. Put Austin on that list instead. The only decent thing Memphis has done for barbecue is combining it with nachos for 10/10 drunk food.
