I'm applying to be a teaching assistant in France next year (Starting October 2023)
It would last about 7 months.
The application lists these regions, and I am meant to select three as my top preferences.
Which would any of you recommend? Especially interested in which areas are the most beautiful or aesthetically pleasing.
Also I'm supposed to pick one from each of the following groups, as delineated in my image, but I can sort the chosen three how I like.

Look at the population densities and pick the lowest.
Or just avoid Paris and you'll be set.

Not the same Anon but Clermont and Limoges are part of the very sparsely populated Massif Central. I think it's one of France's most beautiful regions honestly. Among the red regions they would easily be my top picks. Not much competition in the North.
Green is a little more tricky. Rennes is great, as is Brittany in general. You could even explore the British Isles if you get time off. Lots of ferry connections to the UK, the Channel islands and even Ireland. I also have a soft sport for Toulouse and its surrounding region. Close to the Pyrenees.
Blue is a clusterfrick. You could make a case for Strasbourg, Lyon, Bordeaux and Corsica. I wouldn't pick Grenoble; I understand your fetish for Avignon, it is a very nice city but France has amazing places everywhere. Lyon and Avignon are well-connected by rail and flixbus lines so if proximity to Avignon really is a factor in your decision making, I'd recommend Lyon.
B is an almost insane diversity of regions. Alsace, the Riviera, or Corsica?!
Of those I would pick Strasbourg or Lyon, personally. Lyon is a little more “French,” with my in-laws calling the city itself “Paris lite;” Strasbourg is a little Germanic around the edges and home to a bunch of EU bureaucrats, but the city itself has a charming, well-preserved old center. I hear Corsica is quite beautiful, but I have never visited; Nice is a bit scruffy and a bit posh at the same time. I like it wouldn’t in the summer high season.
In list C I like Dijon; small, historic center in good condition, small but moderately sophisticated.
Can’t say much about list A; Reims is champagne country?
I spent last Spring semester in Nice. I liked it to a degree but some stuff was pretty off-putting, plus I'd get the same salary everywhere and I figure rent in Nice (And that whole region. Keep in mind that I could be sent to a rural school or a smaller city) would be a much bigger chunk than elsewhere.
Lyon was beautiful when I went there, would love to go again, so being in the area would be good. Strasbourg was nice as well, however I did get assaulted in the train station.
Of all the cities I visited in France the one I'd most like to revisit or live in would have to be Avignon, but I can't risk being anywhere near Marseille so I can't choose that region. Maybe the Grenoble region to be near both Lyon and Avignon?

I don’t know that part of France at all, so I couldn’t say. I must have crossed it at some point but haven’t ever stopped there that I can recall. Only place I’ve been from list A was Reims, and all I remember is people shilling Champagne (which I don’t drink).

If you want sun and beaches : Montpellier or Bordeaux.
If you want mountains : Grenoble.
If you want cultural France (over the top architecture and museums) : Strasbourg or Paris.
Good luck, keep in mind that not every french person is nice. Don't believe far right propagand but don't be a fool and you should be fine.
