So I'm flying for the first time in a very long time at the end of the year. I don't even know what to do at the airport. How do you check-in? How long does security take now? Can I bring my bags into the cabin? I was looking at budget airline flights and they charge ridiculous prices for baggage allowance.

just walk into line with your passport and yell "sort it out wagie!"
budget airlines, you check in online - you get a confirmation email with your booking reference number and then 48hr (give or take a day) before the flight you can book in online their website or app, maybe easyjet lets you book in a month in advance..(nowadays most want you to have the app so they can data mine you, but it is kind of convenient.) and you will have the boarding pass on your phone or print htem beforehand.
Midtier airlines may give you a proper boarding pass when you arrive free of charge but budget ones might try to charge you for printing one.at airport.
budget airlines charge per checked baggage. medium tier airlines may include a checked bag - charge for more than one.
airlines allow one cabin bag usually, for budget airlines sometimes they charge extra for a large cabin bag (yet still able to fit in overhead storage), budget airlines may charge for a second carry on bag. Usually your ticket will include carry on backpage/small roll bag - in addition to a personal item like a big jacket or a purse...how flexible their definition is i duno, nickle and diming the customer is how they make their money.
if you check a bag, some airports are super shitty now for their baggage claim - londong-heathrow and toronto have been very bad this summer
THat being said, it feels worse to have all the extra fees from a budget airline but it still may be cheaper than the medium tier flight.
early morning flights are cheaper than midday flights.
security usually is chill, 15min, but some times things get busy due to an influx of unprepared passengers and surly understaffed employees.

On security - I was in San Francisco back in June and it took less than 15 minutes in the late afternoon. 6 AM at a semi-backwater airport a few days before that there was a 30+ minute line of chaos. Plan ahead, check to see if your airport information online regarding line estimates.
I always get 2 hours early and it always takes like 20 minutes max and wait 1 hour 40 mins
checked and yeah, 2hr is only necessary if you need to check baggage or don't know what you're doing. Once I had to stand in the baggage check line in order to get my boarding pass because they don't have a kiosk or allow online check in for international flights. Stood in line for nearly an hour but security was 5 min.

yes they're quite homierdly. As a budget traveler, I have a large backpack and I roll up my clothes so I can fit a bunch of shit in it. That goes under your seat for free. If you need jackets, wear them in the airport, then use them as seat covers/blankets/pillows on the plane. Refillable water bottles are nice because you can just use the fountains after security or if you have lounge access, put beer or whatever drink you want. I was even a Black person and filled it with soup once and kept happily fed the whole Iceland stopover flight. Airports can be fun, just leave plenty of time and walk around people watching. No reason to be stressed.
