Near Istanbul? Iznik is a great, small historic town. Edirne's also not too far. A bit further afield there's a lot more options, most notably Balikesir, Eskisehir, Afyonkarahisar, Beypazari, etc

Be sure to Try out food while you're in Turkey, try not to buy from cafes and beware of swindlers, stuff is extremely cheap here for foreign currencies
