Is it worth visiting if you've already spent a few weeks travel England/Scotland?

What is the must see/do things of Ireland?

Where can I find a quaint seaside village where I can drink with fisherman?

    Yes it is.
Go to the Aran Islands, either Inis Oirr or Inis Mor for what you are looking for. Inis Oirr is a fishing village with some neat ruins to explore and a few good pubs and restaurants. Inis Mor is bigger and has a lot more ancient ruins, but it's a big more commercialized and touristy. For either island it's a direct bus or train from Dublin to Galway then there's a bus and ferry from there. Stay two nights if you can. Or go to the Dingle Peninsula or Donegal if you have a car.
The Irish countryside is where it's at. For a day trip from Dublin, Newgrange is pretty cool, so is Glendalough. Rock of Cashel is also a good trip from Cork. Galway is a cool town.
Killarney is a bit overrated and so are the Cliffs of Moher (especially on a cloudy day).

You sound quite the expert so for someone staying in Cork would you rather recommend a day trip to Kinsale followed by the Old Head or a day trip to Cobh? I planned 2 nights in Cork and though i had enough time for both but that Rock of Cashel looks too good to be missed

Both are nice but I'd say Kinsale is prettier. Although if you're interested in there's a Titanic museum in Cobh.
The Ring of Beara is also a nice drive in west Cork. It's less popular than the Ring of Kerry so you don't have as much traffic but you still have great scenery.
Cahir Castle is 10 minutes or so from the Rock of Cashel and makes another good stop if you go up there.

If you stay in cork city there is a Train that runs into Cobh or a bus direct to Cobh. Theoretically, I think you could do Cobh and Kinsale in the same day. Cobh would be about 2-3 hours needed there then kinsale in my experience was about the same amount of time. See Charles Fort (pic related) if you wanna break it up spend a 3rd day in Cork city and just wander around it’s a beautiful city. Cork is the second biggest city in Ireland so it’s well connected by bus/train to about any other major spot in the country. I wish I could experience Ireland for the first time again, best of luck on your journey and enjoy.

I like Ireland and have been on several occasions. I have family there.

That said, it is very, very similar to England and Scotland (almost any Irishman will vigorously deny this). If you liked Britain and want a new variation on what you've already experienced then go for it. If your time and budget is limited and you want to experience something new, go somewhere else

Generally speaking: more rural, wetter and a bit friendlier. If you're a fan of Joyce, Yeats etc definitely go. If you want Celtic culture and nice scenery go to Wales instead.

      Is Ireland calmer than England?

Yes: there are about twice as many people in London alone than in the whole of Ireland. A bigger percentage is countryside, and that countryside feels more "rural"

And beyond that: whole place is just a bit more easygoing
