Less popular/tourist-y areas in Quebec?

I'm going to Quebec for the first time this summer, and I was wondering if there's any less tourist-y towns that are worth visiting. For reference I like meeting random people & adventuring with them for the day, beautiful nature that's not too far from humanity, and anywhere that looks like quaint Old World Europe. Thank you.

    beloeil / Mont Saint Hilaire
    can be reached from 1 hr bus from Montreal.
    Beloeil has some nice old town with friendly locals and bars going on, Mont saint Hilaire has the mountain to go for a hike

    The only part of Quebec that looks "like Europe" is the touristy part of Montreal and Quebec City. The rest, you might as well be in Pennsylvania.

    Alright, i'll tell you something i shouldn't, because there's already too much tourists in this place and i don't want to get the situation worst. Yet if i was in your situation i'd like a local to tell me what i want to hear so here we go : what you're looking for is the sea shack. It's a youth hostel in Gaspésie. First, you'll be near the chic choc mountains, which is a great hiking place. You'll also be directly near the St-Laurent, if you like water sports. But what's important is the place in particular : it's a place out of the space and time. It's a refuge for free spirits. There's no chance you'll go there and won't have fun : there are parties / music shows every day. People are already friendly in Gaspésie, but this place in particular is special.

    From QC, you can go up to Baie-Saint-Paul which is close to great nature. There is a dogsled farm you can do in the winter.

    Montrealer here. Would suggest maybe Magog. Touristy town, but still a fun area overall.
