I found the Monte Albán archaeological site very much worth visiting; with just a week you can probably amuse yourself well just in and near the city if you’re not dead set on a very active holiday, but people justifiably love Puerto Escondido on the Oaxacan coast, as well—you’ll want to fly if you can afford it, as doing it by bus or car is an all-day affair (something like eight hours, some of it on pretty crap roads; when I was there there were night buses but they were discouraged for security reasons and would surely not be a restful journey). It’s tiny and not very slick but essentially a beach resort town. Gets a lot of hippies, Mexican families, and some surfers.
It's pretty cool for food + places to walk by with all the grafitti but I didn't feel like nightlife was worth mentioning but maybe my experience was kind of shitty since I was still blowing liquid out my ass
I'd recommend:
1 day explore the city
1 day monte Albán
1 day explore the west valley until you reach hierve el agua before sunset (a lot to see in the valley on your way there)
1 day take a temazcal and then honguito in San Jose del Pacífico
Rest in the beach (3 areas to choose: puerto escondido, mazunte/zipolite or huatulco depending on what vibe you like best)
drink mezal and take in the city enjoy the colonial haciendas also straight up where nacho libre was filmed look up the places where they filmed neat little corners of mexico
In Oaxaca city, check out Barrio de Jalatlaco (in the day). Nice to walk around but nothing crazy there. It's about a 30 minute walk from downtown where you can visit the open market 20 de Noviembre. Prepare to get diarrhea, Mexican hygiene sucks.

1 week is plenty of time to see the ruins and eat Quesillo and Mole.
But you should be going during the Guelaguetza if you're only going to visit once
