So I'm planning on flying into Malaysia with a one-way ticket. Does this work, or do I need proof of onward travel?

Never had issue so long as I explained my itinerary and gave expecations of reasonable funds/intention to travel on.

What about the airlines? Will they even let you board the plane?

They don't know if you are on another connection. Customs will grill you, airlines take your money.

Airlines definitely care that they don't carry somebody who doesn't fulfill the requirements of the destination country as they can get fined for it.
A ticket for a bus leaving the country should be sufficient, another method is to buy a fully refundable plane ticket and cancel it once you arrived.

If you are allowed on the plane you are good

fricking JetBlue made me book an onward flight at the gate to let me board flying to Peru. The Peruvian govt 100% doesn't give a shit if rich Americans have proof of return.

I would recommend, if you're unsure, is to get in line for the flight as soon as possible and have a ticket in the shopping cart in case they make you buy one. You generally can't refund flights taking place outside the US.

You just need to buy a fully-refundable ticket.
Obviously it will be more expensive but if you're not going to use it anyway you can just pay for it with your credit card and get it refunded before the deadline of your monthly balance.
