Sitting down at a street food stall in some Saigon, listening to the Vietnamese people around me, people of all ages, eating and talking. Two tourists who I think might have been Indian asked the guy running the stall for lemon but the guy didn't know what that word meant, I by chance remembered the Vietnamese word for lemon and told the stall guy that he was asking for chanh. This lead to him telling me about the kumquat plant he was growing next to my table. The culture was RICH.

Depends on the country but in East Asia (Vietnam too) I literally never got diarhea or food poisoning from street stalls. In SEA I got diarrhea a couple times but extremely little. LatAm was pretty bad though. I've never been to India but everyone has nothing good to say about Indian street stalls.
