Give us a bit more info OP. Any region in mind? Are you more a city or nature guy? Do you prefer to be on your feet all day or wanting to chill?
In regards to the money: Covid made cashless transactions a lot more common. My local baker still only takes cash though.

I plan on visiting Northern Germany around the Lübeck/Hamburg/Bremen area

With Covid many stores added card payment to reduce contact by coins, etc. So even many bakeries accept cards now. Only stores I know off where you still pay cash is Döner (black money business?). But that's in South Germany. I never went to the north.
Even though it's filled with Japs, Rothenburg ob der Tauber is comfy. I'm about to head to Germany for two weeks for the first time since 2019. Can't wait lads.

Visit Landsberg am Lech. It's a small beautiful town in Bavaria. Not tourist filled but lots history including Hitler and Johnny Cash. Also close to Kloster Andechs where you can enjoy great beer and eat traditional food.
Heading down to Austria to spend a few days in Vienna and Salzburg. Then going up to Erlangen where my wife's family is.
