What do you think of my travel plan?

It's a work in progress, I am not making a schedule and kinda winging it. The main goal is a food tour, some places I will go, walk around, eat, and say I have been there. The rule is I have to try a local dish, even if I have eaten it before.

Besides that I will probably check out a few museums, get a guided tour here and there, try a cultural experience, see a local performance, or stay a week or two if I like the atmosphere. I can always visit again, I have time and money.

One last thing I hate flying so this time I am staying continental, and I am generally skipping countries I have been to already. I may not get to everywhere on the list and it is in no particular order

      Romania is soup heaven. If you don't mind sourness. Light soups.
      Their mici is also great, but it's something that you get on the Balkans, too.

      Budapest has lots of good goulash soup, and I would def try it once. Look for market halls during lunch time, they have tons of homemade style dishes for cheap. Just avoid the Great market hall and the Hold utcai, those are mostly tourist traps. The Fény utcai, Lehel téri, Újbudai, etc etc market halls have better offerings. Make sure you try some dishes with túró (a dry cottage cheese). Eg. Turkic and Slavic places have that type of cottage cheese, too, but nobody else does the variety of dishes like Hungarians. It's in everything from savory to sweet dishes, in every form you can and cannot imagine. Túró gombóc is a good one to begin with.
      Note that any place that sells traditional Hungarian dishes outside of weekday lunch hours has the tendency to be tourist traps. Ain't no Hungarian goes out to eat proper Hungarian dishes when it's not a quick work lunch setting.

      Bratislava is great for everything that you can kill in a forest nearby and stuff with potatoes and sheep cheese. Bryndzové halušky would be a tourist classic, and something you can't really get anywhere else in the world (or, not properly made). But they have tons of other nice stuff obviously. Bryndza is something that eg. Romanians have, too, but somehow it's hard to get it as fresh in Romanian towns as it is in eg. Bratislava. (Btw go to anywhere else in Slovakia if you can, literally every town is nicer than Bratislava. A lot nicer.)

      Don't forget waffels in Belgium. Luikse wafels or whatever.

      I second your impression on Vilnius, Riga etc.

      I feel like the only thing that's missing from your list is some beetroot-based soup or something. Almost every Slavic country has their version of it, Romania, too. In Poland they have a pierogi version of it, too. It's a must.

        If you make it to Bosnia, you should definitely give Bosnian "pita" (picrel) a try. You can get it filled with meat (like a burek) or potato or cheese or other things.

        Agreed on the great market hall. Hold utca piac has been closed since COVID and is now some other kind of tourist trap. Lehel piac is good.

        I actually don't like gulyas. In case OP also finds he doesn't, I would recommend to try a Hungarian porkolt too. Retes (Hungarian strudel) is good with turo filling. Poppy seed filling (makos retes) is also very Hungarian and very good.

        I am trying to avoid too much time on a train or bus, if I find another route through Slovakia I will try it, but since Bratislava is close to Vienna it seemed convenient.

        I've had a lot of Russian borscht and the Polish version lacks substance but I think I'll get the dumpling version for sure.

        Bosnia is a must visit but Balkans is another time since it requires immigration check, I will have a separate trip there and on to Greece, Turkey, and the Caucasus.

      Food is one of the most important things of a travel for me.
      Spain is one of the best countries for food.
      Try authentic paella (basic bitch option but paella outside of Spain is not even close to how good it is) or go for anything really, asados, jamon bellota (best ham in the world), migas, cuajada etc.

      Nordic countries have very straightforward food and aren't worth a special trip to go eat in, although as with anywhere a couple of things are very tasty. Norway's national dish is literally a Dr Oetker frozen pizza, or maybe a mild taco mix from a packet

      Iberian food is as good (but of course different) to Italy, just go to a place not packed with drunk tourists and choose some stuff it'll be great.

      You don't like flying; you can get to the UK via rail or boat and they have better Indian food than India if you know where to look. The British empire also gave their museums an impressive amount of stolen artefacts.

        Thanks. Nordic countries for me are more a scenic thing, food looks terrible but still wanna try swedish meatballs lol.

        I need to learn more what to eat in Spain and Portugal, I trust med countries. Also I am skipping uk, been there already and hated it.

        You can get proper Bratwurst, Gulasch, Cevapcici, Fondue and Schnitzel in Vienna. Pretty good Italian pasta and pizza too.

        Vienna seems to have a lot going on, looking forward to it.

    I've been to la 7 Portes. The paella was brilliant.
