I could recommend you some in vicinity of Frankfurt Airport. Traditional architecture, barely any tourists, fields and hills for hiking. The area is pretty expensive though.

there are many villages that look beautiful but i duno if they are comfy for staying after you get a photo or tow

I heard this has a beautiful coastline, but it's not as well-known for beach tourism as some other European countries with warmer climates.

Baltics are cold, short summer and longer dark in winter. Would be an option if you believe in scoience,l. Me is more on observation which results to prefer the Meds.
I've just topped up my Tap card and a couple of other cards for my vacation. Baltic region might be cool and interesting, but it's not aligned with my goals and interests. I'm not going on vacation for scientific research, environmental studies, or cultural anthropology; those aren't my vacation priorities.

It's got all you need, B&B priced more or less reasonably at 40 eur per day. It's not a resort town, but instead with unique character, plenty of shops, restaurants, water activities etc, good infrastructure. The only thing that's dodgy is Russia next door

That's not a challenge, but honestly, I'm just not a fan of the place. There's not much there that really catches my interest. I think it might interest OP but not me.
The countryside of the Netherland is really chill, and you can reach it easily by train.
There are a bunch of forests, cows, farms and more cows, but after visiting one small town all others will look the same, there are not much variety or things to do, but people are usually much nicer (even more if you're a foreigner), nothing like Rotterdam, Amsterdam or Utrecht, just try to avoid the circle belt.

Just spent a few nights in Stow-on-the-Wold in the UK Cotswolds. Was very comfy.
