Honestly, this would really only make sense if you had a car. Most things to do, other than just visiting capitals and bigger cities, that all look the same and have nothing to offer, will be in countrysides, mountains, remote locations etc. You won't be the only retard visiting, though, I wouldn't worry about that. But still beware, in most countries they will try to scam you here and there.
I've been around eastern Europe. I'm leaving next week for a Baltic trip. I know that the more Central European states like Poland, Czechia Hungary and Slovakia are pretty good places to travel. The western Balkans are also very fun places to visit. Countries like Serbia Romania and Bulgaria tend to be a bit more rough around the edges.
All depends on what kinda shit your into.

I did this road trip last year with my gf. I had a fucking blast. My gf would pass out early and I would hang out with the local girls in the bars. We spent the days just walking around looking at shit. We averaged 10-14 miles every day. Food was cheap, beer was $2 at the most expensive places. The highways were safe and crossing the borders was quick and easy, but driving in Prague was a mistake. If you're borderline retarded, you want to take the train.
Spent 4 full days in Prague, 2 Days in Vienna, 1 day in Bratislava, 3 full days in Budapest and 2 in Czesky which was perfect all around.

We mostly just walked around and explored the cities. Prague is very walk-able. We would eat outside and drink cheap beer. We'd usually hit a museum about once a day. You can walk right in most churches and explore. There are dozens of castles you can explore right outside the city
In vienna, we rented lime scooters and rode all through the city and then into the main park. There is an awesome wide path on the river with beer gardens. At night, everyone is outside drinking and hanging out. We also ventured outside the city and checked out a few castles.
Budapest is also really walkable. Awesome bar scene. The best architecture Ive ever seen.
We spent the right amount of time in each city.

Because each european country has it’s own internal topics and customs that people tend to stick to, and it literally stops at the border. A well read/travelled person might have an overall idea of whats going on elsewhere but probably not a very specific one. It’s hard to keep track of multiple countries.

OP, the common trip of like 10 days is 3 days each in Vienna Prague Budapest. Think each city needs 4 days, not 3, and there are cities to do beyond that..doing a trip to Poland, Romania. Vienna has several trains and day trip ferries cruising down the Danube to Melk, or train one-way.
No car needed in any of these countries, if you fly plus trains.
As far as reservations go, pick your hotels from sites like TripAdvisor, using the rankings and quotes for your dates. If you have some horrible credit card exchange rate, then prepay your trip using a single purchase through a travel agency like europeanvacations. Single transaction fee/single purchase.

Depends how you define eastern Europe. Czechia is one of the most visited places in the world. In Europe a lot of places in Eastern Europe are very popular tourist destinations, might be less known only if you're American or Asian.
But the fact is that outside these most renowned places like Prague or Budapest, generally Eastern Europe is just a cheaper and poorer-looking rip-off of western Europe. There isn't any kind of specific Polish or Romanian or Serbian architecture to be honest (maybe except for the churches, especially orthodox ones), it's all western styles but usually cheapened to fit in local conditions. That's why tourists prefer to see the 'original' places in western Europe rather than their worse copies in the east.
