just outside the city is full of grove type restaurants, i remember one with a creek running through it where you would put your wine in to chill it (every georgian family practically makes their own wine).
Georgian hospitality is legendary but IDK how much you experience of that being a tourist solo traveler.
Most of the best parts of Georgia are the supras at people's houses and the things friends do together generally so maybe try to couchsurf or somehow make friends with someone to host you if you want to see the real worthwhile stuff.

I'm visiting right now and yes things have doubled or tripled - but still very affordable for someone from abroad.

It's a depressed, run-down city. Nothing to do there.
The cathedral isn't too bad, and the river's quite nice. Other than that, go elsewhere to see nicer things.
