I was pickpocketed extremely blatantly by a gang of hooded yoofs who cornered me, in a wide, well-lit and sparsely populated sidewalk no less. I shouted at them to stay the fuck away when they got really close but they already took my phone. Fuck I was so pissed, but it was night and I was outnumbered so I had to just watch them walk away.

Do not buy "Police Magnum" pepper spray for defense. There's a reason that it is so cheap. Years ago I LARPed as an attacker, and my sister had to deter me using this brand of pepper spray. She failed multiple times to hit me with enough spray to make a difference. Only a full-on blast in the face while I stood still sufficed to make my eyes burn enough that I couldn't keep them open, and even that only happened after a few seconds' delay.
I recommend Sabre Red pepper spray with CS tear gas. FAR more potent, and even if the attacker is wearing sunglasses and a mask, the tear gas will fuck him up. It will fuck you up too if you stick around, so be sure to run off immediately after deploying the spray.

My biggest concern is being pickpocketed by someone walking by while I am standing in a line, say at a popular food stall on a crowded street. Standing still with my ass to the traffic, I am an easy target, and if the pedestrian traffic behind me is dense, it would be impossible to tell who did it even if I react instantly. In the past, I have untucked my shirt and pulled it tight against my back pockets when in such a setting.
My walking speed is fast enough that it is virtually impossible for someone to come up behind me and swipe my wallet. A guy who notices me approach him and then steps out behind me will trigger my alertness. Even in the noisiest traffic, I can usually hear someone running up behind me. They see my left arm move back to guard my wallet, and they run on past. I rarely look over my shoulder on the street, but I often look under it, down toward my left hip. Looking down and to the left as you rotate your body a few degrees to the left is the best way to observe what is happening directly behind your ass if, say, a gaggle of kids are running up on you from behind.
One trick particularly useful to watch your ass in dense crowds is to watch the expressions of the people who are walking or looking in the opposite direction I am going. Especially the shopkeepers, security guards, and other people who are always on the lookout for thieves. Any sudden alertness on their part is a red flag.
I have not yet walked into a pickpocket "trap", but if multiple young people begin moving in a predatory way relative to me as I approach them, my adrenaline will dump. Of course, they suddenly become innocent youths goofing around with each other as I continue on my way.
Why not just keep your wallet in front or internal pockets (jacket)? I only use back pockets for things like train tickets that nobody would bother stealing. Backpack goes in front of me when there's a crowd and I keep the zips on the inside. I'm sure a determined thief could still pick my pocket but why bother when somebody else will be less cautious/alert?

How can you get cornered on a wide empty sidewalk? You slowed your pace out of uncertainty as you approached the group, I bet, and that gave them the opportunity to swarm you and grab your shit. Once it became clear that they were all fixated on you and moving in relation to you (pack predatory behavior), you should've tensed your shoulders for bodily impact and lengthened your stride to the limit. Of course, if you are a manlet, your stride won't be too impressive, but do your best to portray yourself as a man who will not be stopped. Alternately, if you see them loitering well in advance and there is little traffic, march right down the middle of the street like a boss, looking neither right nor left and using your ears to stay alert to traffic coming up from behind.

OP here, this actually happened in Manila. In the future I would use one of those front pocket straps with a zipper. And avoid public transport, spend the extra money to get a Grab (local Uber service). Not even taxis are safe, they will fuck with their meter to scam you. Never walk out at night unless you're in BGC, always use a Grab.

But my father-in-law got his wallet snatched on a crowded bus in Rome two weeks ago. I was there as well, but I was standing against the wall and nobody could have gotten behind me.
Left me with a really bad impression of Rome, and I was happy to leave the next day.
Use airtags or smarttags or whatever your phone supports. Put one in your wallet, one in your bag, one in your other bag, hide it in every item you're carrying.
I was pickpocketed on a busy side street in paris, in the grands boulevards area.
An arab dude approached me and asked for a light. Now I know this to be a major red flag, but I was dumb.
I said no, and he gestured to give me a high five, I responded, he grabbed my hand for a sec and bumped into me really violently. I realized 5 seconds later that my phone was gone and of course he was nowhere to be found.
I went to the police station to get proof for insurance but obviously they couldn’t help further. I gave a description of the guy (the form even had a special box to tick for arabs lol) and a contact email.
Luckily I speak passable French otherwise it wouldn’t be possible to do anything with bored French policemen on a night shift. They were actually nice to me though.
I think people should stop saying "pick pocketed" when they mean "robbed".

the train was not jam packed but quite busy and we were both standing. a tiny ratfaced gypsy looking girl sidled up to my girl and when we noticed her the girl kind of stared right into my girl's face before shuffling off
afterwards my girl noticed her handbag had been unzipped and rummaged through but nothing obvious was missing
