I'm staying in Copacabana now and occasionally go out past midnight to the grocery store or something, it's a bit sketch and the streets are mostly empty other than some homeless and a few other normal people, I've been fine, but I wouldn't really recommend it, most stuff shuts down about 10 or 11.

Nah, it's not that bad. Stick to Ipanema, Urca and Copacabana - maybe Flamengo - and you'll be fine. The thing is, you can't get piss out drunk and stumble on the streets like you do in Dublin. You will get mugged if you are an easy target and a completely carefree dumbass. People will get an uber or a cab if the destination is more than like 5 blocks away.
In the end, the bar hopping culture is not really a thing. You'd go to a bar and drink and eat something, then go to a nightclub or samba venue and then go home or, if you stay awake until morning, to a place where you get breakfast, and then to the beach.
Of course, there are less safe itineraries, which can be quite fun, but I wouldn't advise it to a clueless tourist with no local connections.
