Prague would be perfect if it weren't so flooded with tourists. I like Pilsen better now to be honest. It has the brewery, good food, cool but small old town, and lots of places to walk around. And most importantly not ruined by over tourism.

It's very clean, very beautiful, people are nice, food is good, it's cheap, safe as hell, and full of youth. Daytime feels family friendly and nighttime has a lot of groups hanging out, having a drink, etc. Many euro cities feel and smell like trash, have crime and graffiti, expensive, Prague feels like Disneyland.
And although there is prostitution and adult nightclubs it's legal and regulated and doesn't even really feel skeezy, it's as safe as Amsterdam but it's not a tourist attraction it's just there and discreet.

Whatever spot you choose you must go super early in the morning to avoid the massive amount of normie, slow walking, moronic tourists. Even OPs pick was taken at around 6:00am or earlier. Going to Charles Bridge after 10:00am and it'll be mobbed with people, stands selling fake shit, and other nonsense.

There is a brewery called U Kunstatu with the best god damn sour beers Ive ever had. It's a chill little brewery that serves cheese plates and wild boar sausage.
Another fricking amazing place right outside of town was called Klášterní šenk. The main courses were all like $10. The beers were $2. The restaurant is in the courtyard of an old castle estate. It was a total locals joint. I don't think I had a better meal anywhere in Europe.
Mincovna was another awesome restauraunt where you could get beer for less than $2. We found it on the last day or I would have eaten their multiple times because the soup was so fricking good.
I also swore by those fricking doughnuts at Oh Deer. I bought a box and ate them every day for breakfast for a week.
Yeah or in March if you can catch some nice weather. Totally empty.

Yeah there will probably be a small bump up in tourism during holidays like new years but the colder winter weather keeps the majority of tourists away
A few nearby villages have this thing, where there is a beer keg put in a water spring, you can come here freely, pour yourself a beer and pay in honestly box for less than 1 burger dollar.
As a local I'm kind of disappointed with the indifference from most of the locals. People throw gays on the ground, litter, let their dogs shit on the sidewalk, piss on facades, puke onto the sidewalk etc.
