Overall we had a fun and relaxing time but for the price we paid, we expected better. Did we just have a poor experience or are Sandals resorts considered overrated?

Resorts in St Lucia are notoriously overpriced and tend to under deliver.
Same for many other islands in the caribbean where you pay a huge premium for the location but that's about it when it comes to why you're paying more than say Punta Cana or Cancun. Unless you go for the 5 star well known brands like Four Seasons or St Regis you will get hustled.
The drinks are watered down because they don't want idiots abusing the all-you-can-drink portion and acting fools on the resort. Are you so much of an alcoholic that you can't even pace yourself with free drinks?
Definitely not an alcoholic but I expected at least a bit of a buzz in a minimum of 1-2 drinks. Especially since they’re frozen sugar bombs

never get hangovers since I am an expert. I have just noticed that there seem to be a lot of people here (and other boards) lately who at any mention of alcohol immediately start preaching and babbling about alcoholism. I think it's the zoomer generation which is much more focused on drugs, particularly synthetic "designer" drugs, and generally dislike alcohol. some kind of weird generational rebellious phase.
if anything, zoomers are more into binge drinking and getting white girl wasted than any previous generation - go anywhere near a college campus on a friday night and you'll figure this out very quickly.
not true at all. the amount of zoomers who dont drink wine, beer, or spirits is surprisingly low. the vast majority drink seltzer and other similarly watered down shit. they get high because weed is basically legal everywhere and they take prescription drugs and MDMA mostly.
i work at a liquor store in a college town. even the guys are buying RTDs, not boxes of beer or liquor. they use these as a pre game at home before taking whatever drug it is they are taking that evening just before they go out to a club or to a party

I work with Lucians and their economy never recovered from 2007/2008 and has gone in the shitter during covid
They also haven’t had much business for 2 years so their tourism/hospitality skills would have atrophied. I disagree that Dominican or otherwise is better, Dominican is full of hustlers and scammers and is aggressive as frick. Saint Lucia resorts clear all the prostitution and poverty out of sight so that it doesn’t offend the sensibilities of white women. That’s the premium you are paying for.
Snorkeling near the Pitons was nice, but that’s about all St Lucia has going for them.
So are the airport baggage handlers who quickly grab your luggage as soon as you step out of the taxi and then expect a tip for carrying it for 30 seconds from the taxi to the entrance only a St. Lucian thing, or is that all over the Caribbean?

They are all the same, go to the Pacific if you want real exotic island vibes. They are safer and have better cultures too

The islands are all the same if you stay in the resort. If you go outside where the regular people are (which, admittedly can be dangerous in some islands) then they're all different.

The entire world is short-staffed and suffered a hit from covid.
Possibly there may be some Corporate hurting since that couple died at the Exuma Sandals resort which was shown to be carbon monoxide poisoning. They were to blame for lack of detectors and and maintainence issues, and they even had forewarning when the guests had been hospitalized before going back to the resort to their deaths in the same rooms.
In my personal experience, all-inclusive is only best when you need the walls of a resort to keep crime and riffraff away from the tourists. Think DR or Jamaica, where the locals might kill you for your watch on a beach, not just rob you, but kill you. You'll never get great drinks when the hotel is on an island. of a country in central america, yes, but not island pricing. Locals pay through the nose for everything, from desal water prices and those awful restricted water showers, to thre fact they have to fly in their OJ or seafood from Miami. The maids might be russians living on property on visas, rather than locals too good to work, or who need more money for the high cost of living. Price it out next time. When I stayed at Frenchman's Reef in St. Thomas, I had not realized I had to pay $40 for ferry over huge giant waves in a dinghy or a taxi to drive like a homicidal maniac just to go into the town for dinner. It was boring not to leave at whim.
Don't feel bad OP, a lot of people go to these Sandals style resorts, there's nothing inherently wrong with them - they're a sanitized, safe experience which is especially good for normie women. I'd say the best way to do the Caribbean is Airbnb but you have to be a bit more adventurous. I truly think the Caribbean is one of the forgotten travel regions, the Bahamas, Jamaica, PR, DR, Aruba, the Virgin Islands, etc. all have different cultures, historic sites, cuisines. Unfortunately they can be quite expensive to travel/eat on because of the distance and import costs.
If you're open to adventure with your girl next time look into the Netherlands Antilles, they're relatively well-developed, safe and have a lot of wonderful natural and historic sites.

True. Going to rural Jamaica reinvigorated my love for travel. It was a great experience and unlike anything/anywhere else I'd ever been.

Most people don't, so if you tip them once in a while, I can assure you they will always serve you first, and serve you very strong drinks if that is your request
Also, the best bang for buck destination imo (excluding Cuba) is definately Punta Cana, DR
