I was considering taking a one week summer vacation in Prague after hearing that it is the biggest beer-drinking city on Earth. Does the city have a lot of street life in the historic center?

There are beer gardens etc. in the center sometimes some random cultural or sport actions like some streetball, folklore festival or some foodie gathering or his type of stuff. You got the tourist things - tours, man who will borrow you some big snake and this shit but it is not like you meet circus performance and batton twirless on every second corner each day of the week..
But there is something going if you actively search pretty everytime.

Against the common assumption as a bald middle aged man with loving wife I am not exactly showering all the girls I meet with my man milk. But it is OK but just at home..

Places to go other than Prague that are less crowded but still tourist accessible?

Small towns around Czech republic are cool - Český krumlov is quite touristy, Kutná Hora is OK, but you got tons of lesser known spaces that are nice for a day trip - Mělník, Kolín just around Prague, Tábor, Telč or Žďár nad Sázavou are around 150 km, Pilsen, České Budějovice..
Basically every town that has more than 5000 people has some castle, museum and stuff to do if you not really unlucky with some commie build town that are pretty rare..
There are tons of castles everywhere even locals don´t know much about - for example Veltrusy(pic related) is supernice park with small castle 30 km out of Prague I was first time in my life last month and you will meet like ten people there on a good day.
Tourist accesible is pretty much all of the country. You can rent a car, public transport is OK, trains go like everywhere and you will find some hotel, pension and pub or coffee wherever you go.. Some regions around the borders are not so developed, but you got nice nature there on the other side...

That's kinda what I was wondering about, places out of the way that are nice and still within reasonable range of a good 'lilypad' of sorts. How is Karlovy Vary? Heard nice things.

Never been there to be honest, but it should be nice. Was full of Russians - not anymore for obvious reasons, so it is cheaper now. It is a spa city, so I would spend few days there with some wellness if it's your thing..

are absinthe bars a tourist trap?

Sort of - the Absinth they sell is just a strong liquor, not some halucynogen like they market it, or how was it in Paris 150 years ago..

Is it easy to find male escorts in Czech Rep?

I don't know, but there are gay clubs at least in Prague and gay people are not really prudes, so it should not be a problem for you to find someone. I would not touch the prostitutes with 10 foot monkey rod.

We like to think so and I believe is truth in some degree.. You got gossip in smaller town and villages, there are snitches and so, but that's about it..
I've got cousin who is dickhead, openly gay, grows and sells weed, breeds dogs without papers, now sits in prison because he threaten to kill mayor of his village where are like twenty houses in very rural part of republic, but he still can go to pub to drink beer with neighbours - they all know he is a dick, but no-one will burn his house or beat him or whatever..

what does this say about how sociable they are? I'm going there next semester for erasmus on my own so I'd like to gauge how easy it'll be to meet new people

What places other than Prague can an English-speaker comfortably visit? I'm sorry to say but I will never be fluent in Czech, no matter how hard I try. I only really know basic greetings & pleasantries.

Younger people can speak english, older not so much but if you are not complete autist you will be able to communicate anywhere.
