Remember that time Kyoto almost went bankrupt during the pandemic? It's a city entirely propped up by tourism like most of the country, either die out or put up.
If you go Kyoto and actually want to go sightseeing to the most popular places, just wake up at like 5am and head to the most popular places first and spend the morning sightseeing around there. I barely saw any crowds and by the time it started picking up I was in a less popular place anyway and just about to head back to my hotel for an afternoon nap
Is Japan worth seeing without knowing Japanese?

Was fine for me with only English and "konichiwa dude". No one is going to stop you booking a bus or train or booking a hotel at anywhere you want. By global standards their English is atrocious and that's even in the tourist places anyway. You can translate any menu from jap to eng in 1sec on your phone, I didn't see really any of this no gaijin stuff that people always say there is in Japan. Dunno what your definition of "tourist traps" but i went to an onsen town to get my white willy out in the public baths without any problems
