Whatever is cheapest and easiest to get to. Sitting on the beach and sipping pina coladas can be done pretty much anywhere there are beaches.
I would just go to Cancun (or around there) if I were you.
I've been to the Caribbean a few times, and there were suprisingly few nice beaches. Most have a resort hotel parked on them, so you'd ideally want to get booked into one of them to get that experience reliably.
October is still the rainy season in the Maldives so I'd avoid it.

Any nice tropical beach destination works. Watch out for seasonality and destination characteristics. there are a range of prices for every budget
just booked a week and a half on the big island of hawai'i. it's pretty sparsely populated and has the only active volcano. great deals in the middle of november and december if you fly into kona intl or hilo
