They've covered far too much of it in orange. The border areas are definitely more likely to cause problems but within each orange area there's plenty of safe places for a tourist. You wouldn't want to be aimlessly wandering through Buenaventura but the Pacific Coast has a number of completely safe villages that are worth visiting. Los llanos and Amazon aren't really places where you're just going to stumble into problems. The south doesn't have the best highlights in the country but you could still easily make a nice overland trip through it just fine.
Albania and Kosovo should be green, so should all of the stans except Tajikistan, Pakistan and Afghanistan. Also change Syria and Iraq to orange, quite a few normie travel vloggers going there now.

I've only done some cursory research but the impression I get is that at least in Mexico City if you avoid the bad neighborhoods and don't walk around aimlessly at night you can be about as safe as you'd be in most European cities. Is this accurate? I'm interested in going there next winter and I'm hoping that if I can take the right precautions and not be an easy mark for criminals I can be basically safe. Curious about Mexico City and the country in general, Oaxaca is the only other city I'm sure I want to see but any insight about other regions would be appreciated.
Your impressions about Mexico City are correct and Oaxaca is very safe, you won't have problems there short of bad luck with petty crime.
As for the map, it't not that off base. As a tourist you wouldn't really find yourself in almost any place that's marked red except for some of the coast but that's a lot safer than the inland regions. Is there anywhere else in particular you want to know about? Haven't been everywhere but I think I've covered about 1/3 of all the depts in the country.
