The hiking trails into the vineyards was legitimately one of the most fun experiences I’ve had. They’re cheep fun, not touristy at all, and close by. Good way to socialize too. Stunning scenery to boot

Rijeka, Croatia, Trieste, Italy, and the Slovenian coast between them. Sure, there are tourists in that area, but nothing crazy. Nice climate with cool but not harsh winters, decently cheap living by euro standards. Great connectivity to basically anywhere, since the airports of Zagreb, Ljubljana and the Italian north are within a few hours either by car, train or bus.
