very much depends on the kind of weather you want. I liked my Southern Spain trip a few years ago in January. Sunny 20C. You could fly into Malaga and rent a car. I like Marbella but I also like the history of Cordoba, Grenada and Sevilla. You only have a week so maybe go on Google street view to see which cities' vibe you like the most

When traveling during holidays, I like to go to places that aren't celebrating said holidays. For example, at Christmas, go somewhere Muslim where it's not celebrated or Eastern Orthodox where it's celebrated in January. This way, I can enjoy my vacation without dealing with things being closed due to holidays.
