my gf and I don't gamble, for me i fear i would get sucked into it cause like the idea so much and my grandma lost so much money doing that. for similar reasons i haven't drank yet

Gambling in Vegas is pretty shitty now unless you're a $50/min player. The odds are terrible, the games suck, and a lot of human interaction is being removed.

Honestly i think people watching and meandering along the strip going from casino to casino is kind of fun too. There's lots of shitbags trying to hustler you along the way but if you ignore them you'll be fine. Worst they'll do is call you a cracker or something.
Honestly Vegas low limit gaming might be the best place to pop your cherry on gambling, you're almost sure to lose and hopefully it will turn you away for life.

There are always different artists coming to Vegas. Take a look at the schedule for T-Mobile Arena, Dolby Live at the Park MGM, The Colosseum At Ceasars Palace.
Are you into sports? Golden Knights and or Raiders might be playing in town when you are there if you're into that.
Otherwise eat. Vegas has a ton of different options from low end to high end. Really depends what you like to eat.

also i was very impressed with the food scene, so if i were to visit again, i would plan my trip around food.
There is so much good food in Vegas. If you go onto Instagram and start looking up food in Vegas, the rabbit hole is endless. My best friend lived out there for 20 years and I lived there myself for 2 years. I visit about three times a year now. The best fricking place in the city for a cheap meal is Shish Kabob House on West Flamingo. The chicken Lula and Beef Lula Kabob combo is literal perfection. My buddy used to serve it to the billionaire gamblers from Saudi Arabia at Bellagio and they would demand that shit every night afterwards.
You can just walk down Spring mountain and walk into any random Ramen joint and have the best Ramen of your life. It's also the only place on the entire west coast to get actual New York Pizza. All the Jersey guys opened up pizza places out there. Not to mention all the high end Michelin stuff or the Buffets.
Red Rock Canyon - massive sandstone walls just outside the city. Scramble around the boulder piles, take a hike, or just drive the scenic loop and sightsee.
Rent a car and leave the city in the daytime. Explore Nevada. Return to your room, smoke some weed, and frick until you fall asleep. No gambling required.
